Creamy Chicken Pot Pie

This pot pie is pure comfort. Use a rotisserie chicken to speed up the prep time!

Chicken Pot Pie

Ingredients

  • 2 pie crusts (homemade or store bought)
  • 2 cups cooked chicken, cubed
  • 1 cup frozen peas and carrots
  • 1/3 cup butter, 1/3 cup flour, 2 cups chicken broth, 1/2 cup milk.

Instructions

  1. Melt butter, whisk in flour. Slowly add broth and milk to make a thick sauce.
  2. Stir in chicken and veggies. Season with thyme, salt, pepper.
  3. Line pie dish with one crust. Pour in filling. Top with second crust.
  4. Crimp edges and cut steam vents.
  5. Bake at 425°F for 30-40 mins until golden brown.
