Creamy Chicken Pot Pie
This pot pie is pure comfort. Use a rotisserie chicken to speed up the prep time!
Ingredients
- 2 pie crusts (homemade or store bought)
- 2 cups cooked chicken, cubed
- 1 cup frozen peas and carrots
- 1/3 cup butter, 1/3 cup flour, 2 cups chicken broth, 1/2 cup milk.
Instructions
- Melt butter, whisk in flour. Slowly add broth and milk to make a thick sauce.
- Stir in chicken and veggies. Season with thyme, salt, pepper.
- Line pie dish with one crust. Pour in filling. Top with second crust.
- Crimp edges and cut steam vents.
- Bake at 425°F for 30-40 mins until golden brown.
