Roasted Cinnamon Chickpeas
Crunchy chickpeas are a fantastic alternative to chips or nuts.
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 tsp olive oil
- 1 tsp cinnamon
- 1/2 tsp ginger
Instructions
- Preheat oven to 400°F. Pat chickpeas very dry with a towel (crucial for crunch!).
- Toss with oil and spices.
- Spread on baking sheet. Bake for 30-40 minutes, shaking pan occasionally.
- Let cool in the turned-off oven for maximum crispiness.
